A Harvard study on food safety inspectors’ schedules found that tweaking schedules could result in the discovery of hundreds of thousands of violations that are now being overlooked in the United States every year. Through a review of food safety inspection from local health departments in the U.S., the researchers found that inspectors cited fewer violations at each successive establishment inspected throughout the day. The researchers attributed this to gradual workday fatigue. One recommendation is to have managers impose a cap on the maximum number of inspections per day to one or two inspections per day.
